Recipe: Overnight Oats with Chia Seeds, Pumpkin Seeds and Blueberries
Weekday mornings can be a crazy affair. Whether you manage a household or work at an office, when it comes to getting your family fed and ready to start their day, there always seems to be not enough time. That’s why we love overnight oats- they’re here to make your mornings just a little bit easier!
Overnight oats are oats that have been soaked overnight in the fridge in milk and mixed with toppings. The soaking makes the oats deliciously soft and they don’t get sticky like hot oats porridge does. The best part about it (other than no cooking) is that it is completely customizable to your needs. Use nut milk for dairy-free options, add some peanut butter to make it more filling, omit the honey/sugar altogether to go sugar-free! Totally up to you! This is one of my favourites and commonly eaten at my house. So use this recipe as is or as a template to make your own!Recipe:
For 1 serving
- ½ cup rolled oats
- 1 cup milk
- 2 tsp chia seeds
- 1 tsp pumpkin seeds
- Handful of dried blueberries
- 1tbsp peanut butter optional
- ½ tsp sweetener of choice optional (maple syrup/sugar/honey)
Mix together the oats, chia seeds, pumpkin seeds with ½ the milk in a mason jar. Add in the peanut butter, blueberries and sweetener. Mix well to combine and add remaining milk. Close the jar and keep in the fridge overnight. You can also store these for up to 3 days for a grab and go breakfast.
Note: It is best to make these in individual servings. These oats can be eaten cold or hot. If you want it hot, microwave for up to 1 minute before serving.
